Looking for the easiest—and perhaps most delicious—breakfast you can ever make in the campsite? When we want to skip the messy cleanup of egg pans without skipping a delicious snack, we love to make egg bites.
These tasty little snacks are basically just how they sound. They’re little bite-sized eggs you can stab with a fork and simply pop into your mouth. No muss, no fuss! Think of them like a cake pop but with eggs! All it takes is a few eggs, some choice additives, and eight minutes in the good ol’ Instant Pot.
Ingredients you’ll need
These delicious bite-sized morsels are easy to make with only a few ingredients:
- 4-5 eggs (depending on how hungry you are)
- Fixin’s – We suggest mushroom, onion, spinach, and cheddar cheese, but it’s really whatever you like in your eggs.
- Splash of milk/milk substitute
- Salt, pepper, and seasonings
In addition to the ingredients, you’ll also need your trusty Instant Pot and a Silicon Instant Pot Egg Bites Pan. If you don’t have an egg bite pan, you can find them online or in most places that carry Instant Pot gadgets. We snagged ours from Walmart for under $12.
Recipe instructions
Have all your ingredients? Then it’s time to make some egg bites! Each tray makes seven bites. If you want more, you can buy a second egg bite pan and stack them in the Instant Pot to make 14 bites at once.
The first step is to mix up your eggs. Crack your four or five eggs into a bowl (per tray), add a splash of milk (or substitute), and stir it all up. I typically use four eggs, but you’re welcome to use five if you prefer your bites a little fuller.
Next, add all your fixin’s to the bowl with your eggs. Like I said, we prefer mushrooms, spinach, onions, and cheddar cheese, but you’re welcome to throw in whatever you want. It all works! We’ve done egg bites with sausage crumbles, bacon, cheddar cheese, or anything else. Seriously, the sky’s the limit! Go nuts.
At this step, I usually add some seasoning, too. Salt and pepper is a must for any egg dish, but I also like to add Trader Joe’s Everything but the Elote seasoning. Mix everything up until it’s nice and blended together, just like you would an omelet.
Before pouring your egg concoction, spray your egg bite pan with some non-stick spray. It helps you get the little bites out at the end. Once it’s all nice and slick, pour in the mixture. Just make sure the pockets aren’t too full. They’re going to expand slightly during cooking, and you still have to fit the silicon lid on.
With all the cups full, put the silicon lid on. If you don’t have a silicon lid with your egg bite pan, a piece of tin foil will work in a pinch.
Add one cup of water into the bottom of your Instant Pot to get everything all nice and steamy. Insert your Instant Pot’s metal steamer rack trivet, and put the full egg bite pan on top. Pop the lid on your Instant Pot and cook on high pressure for eight minutes.
Pro Tip: Most egg bite recipes online say to cook for eight minutes. I’ve done this recipe several times on both high and low pressure and have found that eight minutes isn’t quite enough to cook all the eggs. If you open the lid after eight minutes and still find the eggs too runny, just pop them back on for another 2-3 minutes. The middle egg always seems to be the runniest.
When the eight minutes are up, quick release the pressure and see what you get! The bites should come right out of the mold, ready to be enjoyed. You can also throw a little more cheese on top (and hot sauce or salsa, if you’re like me), and you’re ready to eat!
My egg bites typically don’t even make it to a plate; I just eat them with a fork right out of the mold! They’re a great little snack that’s easy to make from anywhere with minimal effort and cleanup—and isn’t that really the best kind of snack!?
